:::HUMMUS DEVILED EGGS:::Prep Time: 40 minThis easy twist on classic deviled eggs uses no mayonnaise or butter but gets plenty of flavor from hummus. Notes: This recipe is easily doubled or tripled for a party.This is a delicious and lower fat/calorie alternative to traditional deviled eggs. Experiment with different flavoured hummus -- there are many variaties available , from garlic to roasted red pepper. Perfect as a quick, protein rich and healthful snack, or as a unique hors d'oeuvre. Kids love these too!INGREDIENTS:6 eggs1/3 cup of hummus1/4 teaspoon freshly ground black pepper, plus more for garnish1/4 teaspoon salt.DIRECTIONS:1. Put eggs in a medium pot and cover with cold water. Bring to a boil over high heat. Cover, remove pot from heat, and let sit 14 minutes. Fill a large bowl with ice water. With a slotted spoon, transfer eggs to ice water bath (reserve hot water in pot).2. Preheat oven to 400 F. Scrub potatoes well and pierce in several places with a fork. 2. Bake potatoes directly on the center rack until tender, 45 to 60 minutes. Top each potato with 1 tablespoon salsa, 1 tablespoon Monterey Jack and 1 teaspoon sour cream and serve immediately.
